INGREDIENTES
Main Ingredients
- 🍗 1 piece (250g) chicken thigh
- 🧅 1/3 stalk green onion
- 1 knob ginger
- 1 chili pepper
- 🧂 Pinch of salt and pepper
- 2 tbsp potato starch
- 1 tbsp salad oil
Sauce Ingredients
- 1 tbsp sake
- 🍬 1 tbsp sugar
- 1.5 tbsp soy sauce
- 3 tbsp black vinegar
- 1 tsp potato starch
- 💧 2 tbsp water
Garnish
- 🧅 Shredded green onion as needed
PASSOS
Slice the green onion into rings and julienne the ginger.
Make 4 vertical cuts on the chicken skin side and season both sides with salt and pepper. Coat with potato starch.
Mix all sauce ingredients in a bowl.
Heat salad oil in a pan over medium heat. Place chicken skin-side down and press with a spatula while frying for 7-8 minutes until golden brown. Flip, cover, and cook on low heat for 5 minutes until fully cooked. Remove from pan.
Add green onion, ginger, chili pepper, and sauce mixture to the pan. Heat over medium until thickened.
Slice the chicken into bite-sized pieces, plate, pour the sauce over, and garnish with shredded green onion.
