PASSOS
Boil 50g of glass noodles in boiling water for 6 minutes, rinse with cold water, and drain.
Mix the boiled noodles with 1 tsp soy sauce, 1 tsp sesame oil, a pinch of salt, and pepper.
Combine chopped chives, drained tofu, 1 tsp soy sauce, 1 tsp sesame oil, a pinch of salt, and 2 eggs in a bowl to create the batter.
Preheat a pan on low heat, place a sheet of rice paper, and spread the batter evenly on top. Add the seasoned noodles on top of the batter.
Fold the rice paper in half and cook on medium heat until golden brown on both sides. Flip only when one side is fully cooked.
