INGREDIENTES
Choux Pastry Ingredients
- 60ml Choco Emong
- 65g cake flour
- 💧 50ml water
- 🧈 50g unsalted butter
- 🧂 2g salt
- 🥚 120g eggs (whole)
Custard Cream Ingredients
- 280ml Choco Emong
- 30g cake flour
- 3g vanilla extract
- 🧈 20g unsalted butter
- 🍬 85g sugar
- 🥚 4 egg yolks
PASSOS
Prepare the choux pastry ingredients: Choco Emong, cake flour, water, unsalted butter, salt, and eggs.
In a saucepan, combine salt, butter, water, eggs, and cake flour. Cook over medium heat while stirring continuously.
Transfer the dough to a piping bag and pipe onto a baking tray lined with parchment paper. Bake at 200°C for 10 minutes, then reduce to 190°C and bake for another 15 minutes.
Prepare the custard cream: Mix egg yolks, sugar, vanilla extract, and cake flour. Heat Choco Emong in a saucepan until warm, then combine with the mixture and stir continuously.
Cool the custard cream in the refrigerator. Fill a piping bag with the cream and inject it into the baked choux puffs through a small hole made with chopsticks.
