INGREDIENTES
Vegetables
- 🍅 2 whole tomatoes
- 1/4 yellow bell pepper, diced
Dairy
- 🧀 60g cottage cheese
Seasoning
- 🧂 Pinch of salt and pepper
- 🍋 A few drops of lemon juice
- A drizzle of olive oil
- 🧂 A pinch of black pepper
Herbs
- 🌿 2 basil leaves
PASSOS
Cut the top off the tomatoes horizontally, scoop out the insides, remove the seeds, and dice the flesh into 1cm cubes.
Dice the yellow bell pepper into 5mm cubes.
In a bowl, combine the diced tomato, yellow bell pepper, and cottage cheese. Season with salt and pepper, then mix well.
Fill the hollowed-out tomato shells with the mixture. Drizzle with lemon juice and olive oil, sprinkle with black pepper, and garnish with basil leaves.
