INGREDIENTES
Seafood
- 🦀 400g crab for hot pot
Meat
- 200g pork belly slices
Dairy / Tofu
- 🧈 300g firm tofu
Vegetables
- 🥬 300g cabbage
- 200g shirataki noodles
- 🧅 165g green onion
- 100g mizuna greens
- 🍄 100g enoki mushrooms
- 🍄 4 shiitake mushrooms
Broth Base
- 10cm dried kombu
- 💧 1000cc water
Seasoning
- 50cc sake
- 50cc mirin
- 🧂 1 tsp salt
- 2 tbsp soy sauce
PASSOS
Wipe the surface of kombu with a damp kitchen paper. Place kombu and water in a pot and let it sit for 30 minutes.
Prepare vegetables: cut cabbage into bite-sized pieces, slice green onion diagonally into 4cm lengths, trim mizuna and cut into bite-sized pieces, trim enoki and separate, trim shiitake stems and make decorative cuts on caps. Boil shirataki in water for 3 minutes, drain, and cut into shorter lengths.
Cut tofu into bite-sized pieces.
Heat the pot with kombu and water over low heat. Remove kombu just before boiling. Add seasonings (sake, mirin, salt, soy sauce) and bring to a boil. Add pork slices, skimming off scum. Add crab, cover, and simmer for 5 minutes.
Add cabbage, shirataki, tofu, green onion, enoki, and shiitake. Cover and simmer for another 5 minutes until ingredients are cooked through. Add mizuna and simmer briefly.
