INGREDIENTES
Seafood
- 🦪 100g shucked oysters
Vegetables
- 🧅 1/2 onion, thinly sliced
Dairy
- 🧈 30g salted butter
- 🥛 200ml milk
Dry Ingredients
- 1 tbsp flour for coating
- 1.5 tbsp flour for sauce
- 🍞 1 cup breadcrumbs
Seasonings
- 🧂 1/4 tsp salt
- Pinch of pepper
- 1 tsp consomme powder
- 3 tbsp white wine
Batter
- 🥚 1 egg
- 4 tbsp flour
- 💧 2 tbsp water
Oil
- Enough salad oil for frying
PASSOS
Thinly slice the onion and set aside.
Wash the oysters in salted ice water, rinse, and pat dry. Coat lightly with 1 tbsp flour.
Heat butter in a pan over medium heat, sauté onions until soft, then add oysters and cook for 1–2 minutes. Remove oysters and set aside.
Add 1.5 tbsp flour to the pan and mix well. Gradually add milk and other sauce ingredients, stirring until thickened. Return oysters to the sauce.
Transfer the mixture to a flat container, cover with cling wrap, and refrigerate for 1 hour. Divide into 6 portions and shape into oval patties. Chill for another 10 minutes.
Prepare the batter by mixing egg, flour, and water in a bowl.
Dip each patty into the batter and coat with breadcrumbs.
Heat oil to 180°C and fry patties for 3–4 minutes until golden brown.
