INGREDIENTES
Main
- 🍚 2 bowls cooked rice (400g)
- 200g ground mixed meat
- 🍆 2 eggplants (160g)
- 🍅 1 tomato (200g)
Seasoning
- 1/2 tbsp vegetable oil
- 🧄 1/3 tsp grated garlic
- 1/3 tsp grated ginger
- 1 1/2 tbsp curry powder
- 💧 100ml water
- 🍬 1/2 tsp sugar
- 🧂 1/3 tsp salt
- 1/2 tbsp soy sauce
- a pinch of pepper
PASSOS
Cut the eggplants into bite-sized pieces after peeling them in a striped pattern with a peeler. Dice the tomato into 1cm cubes.
Heat vegetable oil in a frying pan over medium heat. Add the ground meat and cook until the color changes. Add grated garlic, ginger, and curry powder, and stir until combined. Add the eggplants and stir until coated with oil.
Add the diced tomato, water, and seasoning ingredients (sugar, salt, soy sauce, pepper). Mix well, bring to a boil, then cover and simmer on low heat for 10 minutes.
Remove the lid and cook over medium heat for another 5 minutes, stirring occasionally, until the liquid reduces.
Serve the curry over bowls of cooked rice.
