INGREDIENTES
Vegetables
- 🍆 1 1/4 eggplants, cubed
- 🧅 1/4 onion, cubed
- 🧅 1/4 green onion, sliced
- 🧄 1 clove garlic, minced
Meat
- 50g ground pork
Condiments
- A small amount of olive oil
- 💧 100cc water
- 🧂 A pinch of salt
- A pinch of pepper
- A pinch of sugar
- 1 tbsp miso paste
- 1 tsp doubanjiang
- 1 tbsp cornstarch mixed with water
- A small amount of sesame oil
PASSOS
Mince the garlic, slice the green onion, and cube the eggplant and onion.
Heat olive oil in a pan, add garlic and green onion, and stir-fry on high heat. Add the onion and continue stir-frying.
Once partially cooked, add ground pork and season with salt and pepper.
When the pork turns brown, add miso paste and stir-fry. Add cubed eggplant, water, and sugar, and simmer. Then add doubanjiang and continue simmering.
Mix cornstarch with water and pour into the sauce to thicken. Add sesame oil at the end.
Cube the remaining eggplant and dry-fry until browned. Serve the sauce over rice and top with the browned eggplant.
