INGREDIENTES
Fish
- 🐟 140g horse mackerel (filleted)
Vegetables
- 🧅 30g green onion (10cm)
Oil
- 1/2 tbsp salad oil
Seasoning for Fish
- 1 piece ginger (minced)
- 🧄 1 piece garlic (minced)
- 3 shiso leaves (chopped)
- 1 tbsp sake
- 1 tsp miso
- 1 tbsp potato starch
Sweet Soy Sauce
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1/2 tbsp sugar
- 1 tbsp soy sauce
Garnish
- 🥚 1 egg yolk
- 4 shiso leaves
- A pinch of white sesame seeds
PASSOS
Finely chop the green onion, ginger, and garlic. Roughly chop 3 shiso leaves.
Remove the skin from the horse mackerel, chop coarsely, and pound until sticky.
Mix horse mackerel, green onion, and seasoning ingredients in a bowl until sticky. Shape into 4 oval patties.
Heat salad oil in a pan over medium heat. Cook patties until browned, flip, cover, and steam on low heat for 3 minutes.
Add sweet soy sauce ingredients to the pan and cook over medium heat, spooning sauce over patties until glazed.
Place shiso leaves on a plate, arrange patties on top, sprinkle sesame seeds, and serve with egg yolk.
