INGREDIENTES
Vegetables
- 1 lotus root (120g)
- 🥕 1/3 carrot (50g)
- 🌱 100g frozen edamame
Seaweed
- 5g dried hijiki
Sauce
- 1 mentaiko (50g)
- 2 tbsp mayonnaise
- 🧂 Pinch of salt
- 1 tsp white sesame seeds
PASSOS
Peel and slice the lotus root into thin rounds. Soak in water to remove excess starch.
Peel and julienne the carrot. Boil the carrot and lotus root together for 2–3 minutes until tender but still crisp.
Boil the frozen edamame for 2–3 minutes, then drain and remove the beans from their pods.
Rehydrate the dried hijiki in water for 10 minutes, then drain well.
Prepare the mentaiko mayonnaise by mixing mentaiko, mayonnaise, salt, and sesame seeds in a bowl.
Combine the boiled vegetables, edamame, hijiki, and mentaiko mayonnaise in a large bowl. Mix well to coat evenly.
Serve the salad chilled or at room temperature as a side dish or appetizer.
