INGREDIENTES
Base
- 🍚 2 bowls warm rice (400g)
Vegetables
- 🥕 1/2 carrot (70g), julienned
- 🧅 1/2 onion, thinly sliced
- 1/2 bunch mitsuba, cut into 4cm pieces
Seafood
- 🍤 6 peeled shrimp
Coating
- 1 tbsp flour
- Salad oil, as needed
Batter
- 🥚 1 egg yolk
- 3 tbsp flour
- 1 tbsp potato starch
- 4 tbsp cold water
Sauce
- 3 tbsp mirin
- 🍬 1 tbsp sugar
- 2 tbsp soy sauce
- 1/3 tsp dashi powder
- 💧 5 tbsp water
PASSOS
Julienne the carrot, thinly slice the onion, and cut mitsuba into 4cm pieces.
Remove the vein from the shrimp and pat dry.
Place carrot, onion, mitsuba, shrimp, and flour into a plastic bag. Seal and shake to coat evenly.
Mix the batter ingredients (egg yolk, flour, potato starch, cold water) in a bowl. Add the coated vegetables and shrimp, mixing gently.
Heat salad oil in a pot to 180°C. Scoop 1/6 of the mixture onto a spatula and gently slide into the oil. Fry until golden brown, flipping once. Repeat for all portions.
Prepare the sauce by combining mirin, sugar, soy sauce, dashi powder, and water in a pot. Heat over medium until boiling.
Serve warm rice in a bowl, drizzle with sauce, and top with kakiage. Add more sauce on top.
