INGREDIENTES
Vegetables
- 🥔 450g potatoes, peeled and chopped
- 🥒 1 cucumber, sliced into half-moons
- 🍅 20 cherry tomatoes, halved
- 🧅 1 purple onion, thinly sliced
- 🌿 65g fresh basil leaves
Dairy
- 50g cream cheese, diced
Protein
- 🥚 2 boiled eggs, peeled
Seasoning
- 4 tbsp olive oil
- 🍋 5 tbsp lemon juice
- 🧄 2 tbsp minced garlic
- 1 tbsp parsley flakes
- 2 tbsp honey mustard or whole grain mustard
PASSOS
Peel and chop the potatoes into bite-sized pieces. Microwave them with a little water for 6–7 minutes until tender, then let them cool.
Boil the eggs in a pot, peel them once cooked, and set aside.
Prepare the vegetables: slice the cucumber into half-moons, halve the cherry tomatoes, thinly slice the purple onion, dice the cream cheese, and separate the basil leaves.
Make the dressing by mixing olive oil, lemon juice, minced garlic, parsley flakes, and mustard. Combine all the vegetables in a bowl, drizzle the dressing, and mix well.
