INGREDIENTES
Noodles
- 1 frozen udon noodle pack
Seafood
- 1 mentaiko (50g)
Vegetables
- 100g grated yam
- 🥕 40g grated carrot
Seasoning
- 1 tbsp white dashi
Liquid
- 200ml unsweetened soy milk
- 💧 150ml water
Egg
- 🥚 1 egg yolk
Herbs
- 🧅 Chopped green onion, a pinch
PASSOS
Peel and grate the carrot and yam.
Cut open the mentaiko and extract the roe.
In a pot, combine grated carrot, yam, white dashi, and water. Heat until boiling, then turn off the heat and mix in soy milk and two-thirds of the mentaiko. Heat gently over medium heat until just before boiling.
Place frozen udon in a microwave-safe bowl, cover loosely with plastic wrap, and microwave according to package instructions. Stir to loosen.
Pour the mentaiko yam cream over the udon, garnish with chopped green onion, and top with egg yolk and remaining mentaiko.
