INGREDIENTES
Chicken
- 🍗 1 piece (300g) chicken thigh
Seasoning
- 1/2 tbsp sake
- 1/2 tbsp soy sauce
- 🧄 1 tsp grated garlic
Coating
- as needed potato starch
- as needed salad oil
Mentaiko Mayo Sauce
- 1 piece mentaiko
- 2 tbsp mayonnaise
- 🍋 1 tsp lemon juice
- 1 tsp mentsuyu (3x concentrated)
Garnish
- 5 leaves shiso
- as needed white sesame seeds
PASSOS
Cut the chicken thigh into bite-sized pieces. In a bowl, mix the chicken with sake, soy sauce, and grated garlic.
Place potato starch in a tray and coat the seasoned chicken evenly.
Heat salad oil in a frying pan to about 2cm depth over medium heat. Fry the chicken until crispy.
Thinly slice the shiso leaves. Cut open the mentaiko and extract the roe.
In a bowl, mix the mentaiko with mayonnaise, mentsuyu, and lemon juice to create the mentaiko mayo sauce.
Plate the fried chicken, drizzle with mentaiko mayo sauce, garnish with shiso leaves, and sprinkle white sesame seeds.
