INGREDIENTES

- 🍗 1 chicken breast (250g)
- 1/2 bunch chives
- 1/2 piece ginger
Poaching Liquid
- 1 tbsp sake
- 1/2 tsp grated ginger
- 🧅 1 green onion (green part)
Nira Sauce
- 🧂 1 tsp sugar
- 1 1/2 tbsp vinegar
- 1 1/2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp chili oil
- 2 tbsp chicken poaching liquid
PASSOS
Place the chicken breast skin-side down in a pot, add enough water to cover the chicken, and add sake, grated ginger, and green onion. Heat until boiling, skim off any foam, then simmer on low heat for 7–8 minutes. Turn off the heat, cover, and let cool. Reserve 2 tbsp of the poaching liquid and drain the chicken.
Finely chop the chives and mince the ginger.
In a bowl, mix the chives, ginger, sugar, vinegar, soy sauce, sesame oil, chili oil, and reserved poaching liquid to make the Nira sauce.
Slice the chicken into bite-sized pieces.
Arrange the chicken on a plate and pour the Nira sauce over it.
