INGREDIENTES
Vegetables
- 5 okra pods
- 1/2 pack shimeji mushrooms
Condiments
- 1/2 tsp grated ginger
- 1 tsp oyster sauce
- 🧂 1/3 tsp salt
- pinch of pepper
- 1 tbsp sake
Eggs
- 🥚 2 beaten eggs
Oils
- 2 tsp salad oil
- 1 tsp sesame oil
PASSOS
Rub okra with a pinch of salt (not listed in ingredients) on a cutting board, rinse with water, remove stems, and cut diagonally into halves. Separate shimeji mushrooms into bite-sized pieces.
Heat salad oil in a frying pan, add beaten eggs, and stir-fry over medium heat until half-cooked. Remove the eggs from the pan.
Wipe the pan lightly with a paper towel, heat sesame oil, and stir-fry shimeji mushrooms and grated ginger for about 1 minute. Add okra and the seasoning ingredients (sake, salt, pepper, oyster sauce) and stir-fry over medium heat for another minute.
Return the eggs to the pan and stir-fry briefly to combine.
