INGREDIENTES
Meat
- 200g sliced pork
Vegetables
- 🥔 1 potato (150g), peeled and cut into sticks
- 1 pack (100g) shimeji mushrooms
- 4 shiso leaves, finely torn
Seasoning
- 🧂 Pinch of salt and pepper
- 1 tbsp potato starch
- 1 tbsp sesame oil
Sauce
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1/2 tbsp sugar
- 1 1/2 tbsp miso
- 1 tbsp toasted white sesame seeds
PASSOS
Peel and cut the potato into 1cm sticks. Soak in water, drain, and microwave for 3–4 minutes at 600W. Trim and separate shimeji mushrooms. Tear shiso leaves into small pieces.
Season pork with salt and pepper, then coat with potato starch.
Mix all sauce ingredients (sake, mirin, sugar, miso, sesame seeds) in a bowl.
Heat sesame oil in a pan over medium heat. Stir-fry pork until its color changes. Add shimeji mushrooms and cook until softened. Add potato and stir until well combined.
Add the sauce and stir-fry until well coated. Mix in shiso leaves briefly before serving.
