INGREDIENTES

- 200g thick-cut pork loin
- 🧂 Pinch of salt and pepper
- 1 tbsp all-purpose flour
- 1 tbsp olive oil
Enoki Sauce
- 200g enoki mushrooms
- 🧅 1/4 minced onion
- 🧄 1 clove minced garlic
- 1 tbsp sake
- 1.5 tbsp soy sauce
- 1 tbsp mirin
PASSOS
Mince the garlic, chop enoki mushrooms into 1.5cm pieces, and finely mince the onion.
Make small cuts in the fat of the pork loin at 2cm intervals, season with salt and pepper, and lightly coat with flour.
Heat olive oil in a pan over medium heat and sear the pork until browned.
Flip the pork and cook on low heat for about 5 minutes until fully cooked, then remove from the pan.
In the same pan, sauté garlic on low heat until fragrant, then add enoki mushrooms and onion. Cook over medium-low heat until the onion softens and turns slightly brown.
Add sake, soy sauce, and mirin to the pan, and simmer while stirring until the sauce thickens.
Plate the pork and pour the enoki sauce over it.
