INGREDIENTES
Meat
- 500g pork shoulder block
Vegetables
- 🧅 1 onion
- 🍄 6 mushrooms
- 🥕 1 carrot
- 1 celery stalk
- 🧄 2 garlic cloves
Seasoning
- 🧂 Pinch of salt and pepper
- 1 tbsp olive oil
- 🧈 30g salted butter
Liquids
- 200cc red wine
- 💧 400cc water
Herbs & Sauces
- 1 bay leaf
- 🧂 1 tsp salt
- 290g canned demi-glace sauce
- 🍅 100g tomato puree
PASSOS
Cut pork into 3cm cubes and season with salt and pepper.
Chop onion and carrot into bite-sized pieces. Slice celery diagonally and crush garlic after removing its core.
Heat olive oil in a pan and sear pork until browned on all sides.
In a pot, melt 20g butter with garlic over low heat. Add onion and celery, sauté until onion turns translucent. Add pork, red wine, water, and bay leaf. Cover and simmer for 20 minutes.
In the same pan, melt remaining butter and sauté carrot and mushrooms over medium-low heat for 5 minutes.
Add sautéed vegetables, demi-glace sauce, tomato puree, and salt to the pot. Stir and simmer for another 15 minutes.
