    • 🍚 2 cups washed rice
  • Fish

    • 🐟 2 cleaned sanma fish (220g)
  • Vegetables

    • 60g burdock root
    • 1 piece ginger
  • Other

    • 20g fried tofu
    • 🧂 a pinch of salt
    • 1 tsp salad oil
    • 💧 320ml water
  • Seasoning

    • 1 tbsp sake
    • 1 tbsp mirin
    • 🧂 1/2 tsp salt
    • 1/2 tbsp soy sauce

Soak the washed rice in water for 30 minutes.

Prepare burdock root by shaving it into thin slices and soaking in water. Slice ginger into thin strips.

Press fried tofu with a paper towel to remove excess oil, then cut into 1cm strips.

Cut the sanma fish in half and sprinkle with salt.

Heat salad oil in a pan and fry the sanma fish on both sides until browned. Remove from the pan.

Add soaked rice to the pressure cooker, flatten it, and layer with seasoning, burdock root, fried tofu, and ginger. Place the sanma fish on top. Seal the lid and cook on high heat until pressure builds, then reduce to low heat and cook for 7 minutes. Turn off heat and let steam for 10 minutes.

Remove the sanma fish, debone and flake it, then mix it back into the rice.
