INGREDIENTES
Main
- 🐟 2 whole Pacific saury (300g)
- 1/2 burdock root (90g)
Seasoning
- 50cc sake
- 3 tbsp mirin
- 2 tbsp soy sauce
- 3 slices ginger
- 💧 300cc water
PASSOS
Remove scales from the Pacific saury using a knife. Cut the head partially, sever the backbone, and pull out the innards. Cut off the tail, divide into three pieces, rinse, and pat dry.
Scrape the skin off the burdock root with the back of a knife, cut into 4cm pieces, and soak in water. Drain well.
Add all seasoning ingredients to the pressure cooker and heat uncovered over medium heat until boiling. Add burdock root and saury, pour some broth over them, and turn off the heat.
Seal the pressure cooker and heat on high until pressure builds. Reduce to low heat and cook for 15 minutes. Turn off the heat and let the pressure release naturally.
Open the lid and simmer over medium heat, spooning broth over the ingredients until the sauce thickens.
