INGREDIENTES
Meat
- 150g sliced pork
Vegetables
- 🎃 150g pumpkin, diced
- 🍅 1 tomato, diced
- 🧅 1/2 onion, sliced
- 🧄 1 clove garlic, minced
Condiments
- 1/2 tbsp olive oil
- 200cc unsalted tomato juice
- 100cc water
- 1/2 tbsp curry powder
- 🧂 1/2 tsp salt
- A pinch of pepper
PASSOS
Remove seeds and pulp from the pumpkin. Peel tough skin and cut into bite-sized pieces. Cut the tomato in half, remove the stem, and dice. Slice the onion into quarters. Mince the garlic.
Heat olive oil in a frying pan over medium heat. Add pork and garlic, and sauté until the pork changes color.
Add pumpkin and onion to the pan and sauté until coated with oil.
Add curry powder, salt, and pepper, and mix until well combined. Pour in tomato juice and water, then bring to a boil. Cover with a lid.
Reduce heat to low and simmer for 10 minutes, or until the pumpkin is tender when pierced with a skewer.
Add diced tomato and simmer for an additional 2 minutes.
