    • 4 servings (65g) cream stew roux
    • 🥛 100cc milk
    • 🧂 A pinch of salt and pepper

Remove seeds and pulp from the pumpkin, cut into bite-sized pieces, and peel the skin. Place in a microwave-safe container with 1 tbsp of water, cover loosely with plastic wrap, and microwave at 600W for 5 minutes. Drain and mash while warm.

Cut the onion into 1cm thick wedges.

Cut the broccoli into bite-sized florets. Place in a microwave-safe container with 1 tbsp of water, cover loosely with plastic wrap, and microwave at 600W for 1 minute. Drain.

Cut the chicken into bite-sized pieces and season with a pinch of salt and pepper.

Heat salad oil in a pot over medium heat. Add the chicken and cook until the color changes. Add the onion and sauté until softened. Add water and bring to a boil. Cover and simmer over low heat for 7–8 minutes until the chicken is cooked through.

Add the mashed pumpkin to the pot and mix well. Add the cream stew roux and stir until dissolved. Add milk and broccoli, and cook until warmed through. Adjust the taste with salt and pepper.
