INGREDIENTES
Fish
- 🐟 2 fillets salmon
Vegetables
- 🧅 10cm green onion
- 🧄 1 clove garlic
- 1 piece ginger
Eggs
- 🥚 2 eggs
Seasoning
- 1 tsp doubanjiang
- 🧂 Salt and pepper to taste
- Potato starch as needed
- 1 tbsp sesame oil
- 🧅 Chopped green onion as needed
Sauce
- 1 tbsp sake
- 1 tsp soy sauce
- 2 tsp sugar
- 2 tbsp ketchup
- 1 tbsp water
- 1 tbsp potato starch
PASSOS
Cut the salmon into bite-sized pieces. Season with salt and pepper, then coat with potato starch.
Mince garlic, ginger, and green onion. Crack eggs into a bowl and mix.
Mix all sauce ingredients in a separate bowl.
Heat half of the sesame oil in a pan over medium heat. Add salmon and cook until both sides are golden brown. Remove from the pan.
Add garlic, ginger, green onion, and doubanjiang to the pan. Stir-fry on low heat until fragrant. Add the sauce mixture and cook until thickened.
Return the salmon to the pan and heat until bubbling. Pour the eggs in and stir gently until cooked. Serve and garnish with chopped green onion.
