    • 1 tsp soy sauce
    • 1/2 tsp dashi powder
    • 💧 420 ml water
  • Finishing Condiments

    • 🧂 Pinch of salt
    • 1 tsp soy sauce
    • 1/2 tsp dashi powder
    • 💧 300 ml water

Cut mitsuba into 1 cm pieces and slice ginger. Sprinkle salt on both sides of the salmon fillets.

Reduce to low heat and cook for 15 minutes. Increase to medium-high heat for 30–40 seconds to create a crispy bottom, then turn off the heat and let it steam for 10 minutes.

Add 2/3 of the mitsuba on top, flake the salmon, and mix gently with the rice.

For the finishing touch, when 1/3 of the rice remains, add the ★ seasonings and heat on high until boiling. Stir well and top with the remaining mitsuba.
