    • 1 tbsp sake
    • 1/2 tbsp soy sauce
    • 1/2 tbsp sesame oil

Prepare the sanma by removing the head, tail, and internal organs. Wash with water and pat dry. Sprinkle both sides with salt and let sit for 5 minutes, then pat dry again.

Separate the maitake mushrooms by hand and thinly slice the onion, removing the core.

Mix the seasoning ingredients (sake, soy sauce, sesame oil) in a bowl.

On aluminum foil, layer onion slices, sanma, and maitake mushrooms. Pour the mixed seasoning over, then top with kimchi and cheese. Wrap tightly to form two foil packets.

Place the foil packets in a frying pan with 1cm of water. Cover with a lid and steam on medium-low heat for 15 minutes until the fish is cooked through.
