Wash the shiitake mushrooms under running water, remove excess moisture, and trim the stems. Decorate the mushroom caps with knife cuts for a floral pattern.

Prepare the garlic by halving larger cloves. Cut green onions into 2cm pieces, slice ginger diagonally, and slice chilies while removing seeds.

In a pot, boil water with stock cubes. Add garlic, ginger, soy sauce, fish sauce, and rice wine, then simmer.

Add shiitake mushrooms and their stems to the pot. Flip occasionally while simmering until the sauce reduces. Add green onions, green chilies, and red chili, then mix well and turn off the heat.

Finish with corn syrup, sesame oil, and a sprinkle of sesame seeds. Serve with rice for a delicious meal.
