Trim the stem ends of the shishito peppers and make a 1–2 cm slit lengthwise. Cut the fried tofu in half along the short side, then slice into 1 cm wide strips along the long side.

Mix the seasoning ingredients (sake, mirin, sugar, miso) in a bowl until well combined.

Heat a frying pan over medium heat and add the fried tofu. Cook for 2–3 minutes until golden brown, then push to one side of the pan. Add sesame oil and shishito peppers to the empty space and stir-fry for 2–3 minutes until cooked through.

Add the mixed seasoning to the pan and quickly stir to combine. Serve on a plate and sprinkle bonito flakes on top.
