    • 🥑 1/2 avocado, diced
    • 🥬 2 lettuce leaves, shredded

    • 1 tbsp mayonnaise
  • Sauce

    • 1 tbsp mirin
    • 1 tbsp soy sauce
    • 1/2 tsp Japanese dashi powder
    • 120 ml water

Combine mirin, soy sauce, dashi powder, and water in a pot. Heat until just before boiling, then transfer to a heatproof container and cool in the refrigerator for 15–20 minutes.

Shred the lettuce and dice the avocado into 1cm cubes.

Prepare the shrimp by deveining and rinsing them under water. Pat dry.

Boil water in a pot and cook the udon noodles according to the package instructions. Rinse under cold water and submerge in ice water to firm up the noodles. Re-boil water and cook the shrimp until they turn pink.

Plate the udon noodles, top with lettuce, avocado, and shrimp. Pour the chilled sauce over and finish with a dollop of mayonnaise.
