INGREDIENTES

- 🦐 150g peeled shrimp
Vegetables
- 1 lotus root (200g)
- 🧅 15cm minced green onion
Seasoning
- Potato starch as needed
- 1 tbsp salad oil
Sauce Ingredients
- 1 tbsp sake
- 1 tbsp mirin
- 1/4 tsp Japanese dashi powder
- 1/2 tbsp soy sauce
- 1 tsp potato starch
- 50ml water
Filling Ingredients
- 1 tbsp sake
- 1/2 tbsp soy sauce
- 1/2 tsp grated ginger
- 1 tbsp potato starch
PASSOS
Cut the lotus root into 12 slices and soak in water for 5 minutes. Drain and pat dry. Mince the green onion.
Remove the vein from the shrimp, chop finely, and mash with a knife.
Mix the sauce ingredients (sake, mirin, dashi powder, soy sauce, potato starch, and water) in a bowl.
In another bowl, combine shrimp, green onion, and filling ingredients (sake, soy sauce, ginger, and potato starch). Mix thoroughly and divide into 6 portions.
Pat dry the lotus root slices and coat one side with potato starch. Place 1/6 of the filling on the starch-coated side and sandwich with another slice. Repeat for all 6 patties.
Heat salad oil in a frying pan over medium heat. Add the patties and cook until golden brown on one side. Flip, cover, and cook on low heat for 4–5 minutes until cooked through.
Pour the sauce mixture into the pan, stirring gently until thickened and the patties are coated.
