- 1 tbsp mirin
- 🍬 1/2 tbsp sugar
- 1/2 tbsp vinegar
- 1 tbsp soy sauce
- 💧 50cc water

Place the kombu and all seasoning ingredients into a pot. Heat over medium heat until boiling.

Simmer for 10–15 minutes until the liquid is absorbed and the kombu is tender.
