INGREDIENTES
Fish
- 🐟 2 fillets mackerel
Vegetables
- 🧅 1/2 onion, chopped
- 1/2 pack shimeji mushrooms
Seasoning
- Enough flour for coating
- 🧂 Pinch of salt and pepper
- 2 tbsp olive oil
Tomato Sauce
- 🍅 1/2 can diced tomatoes
- 🧄 1 clove garlic, minced
- 1 tbsp olive oil
- 50cc white wine
- 💧 50cc water
- 1 tbsp soy sauce
- 🍬 1 tsp sugar
- 🧂 Pinch of salt and pepper
PASSOS
Pat the mackerel fillets dry with paper towels, season with salt and pepper, and lightly coat with flour.
Chop the onion finely. Mince the garlic and remove its core. Trim the shimeji mushrooms and separate them into bite-sized pieces.
Heat 2 tbsp olive oil in a frying pan over medium heat. Place the mackerel skin-side down and fry until the skin is golden brown. Flip and cook for another 3–4 minutes until fully cooked, then remove.
Wipe off excess oil from the pan. Add 1 tbsp olive oil, garlic, onion, and shimeji mushrooms. Sauté over medium heat until softened.
Add white wine, diced tomatoes, and water. Simmer over medium heat for 3 minutes. Stir in sugar, soy sauce, and salt and pepper.
Return the mackerel to the pan. Simmer gently over low heat for 5 minutes, stirring carefully to avoid breaking the fish.
