    • 200cc water
    • 1 tbsp sake
    • 2 tbsp mirin
    • 1/2 tbsp soy sauce
    • 1 tbsp miso
    • 1/2 tsp Japanese dashi powder

Cut the konjac into halves lengthwise, then into quarters. Boil the konjac in water for 3 minutes to remove bitterness, drain, and let cool.

Cut the bok choy into halves, then slice the stems into quarters lengthwise and the leaves into 4cm widths. Microwave with 1 tbsp water for 3 minutes, then drain.

Spread the pork slices, dust lightly with potato starch, and wrap each piece of konjac with pork.

Mix the seasoning ingredients in a pot and bring to a boil. Place the pork-wrapped konjac seam-side down into the pot, reduce heat to medium-low, cover, and simmer for 7–8 minutes.

Serve the simmered pork-wrapped konjac on a plate and garnish with bok choy.
