INGREDIENTES

- 1/2 pot bean sprouts
- 200g pork
- 🧅 1/2 onion
- 4 cups water
Seasonings
- 1 shot glass chili powder
- 1/2 shot glass soy sauce
- 1/2 shot glass shrimp paste or anchovy sauce
- 1-2 stalks green onion
- 🧄 1 spoon garlic
- 1 green chili
PASSOS
Slice half an onion, chop one green chili, and one stalk of green onion finely. Slice the remaining green onion into larger pieces for later use.
Wash the bean sprouts thoroughly.
Heat 1-2 tablespoons of cooking oil in a pot and sauté the chopped green onion to make green onion oil.
Add the pork to the pot and stir-fry on medium heat until the pork turns white.
Add one shot glass of chili powder to the pork and stir-fry on low heat until the chili powder is evenly coated.
Add the bean sprouts and pour 4 cups of water into the pot.
Add the sliced onion and, if available, sliced shiitake mushrooms. Cover the pot and boil on high heat until it starts simmering.
Once simmering, reduce to medium heat and add soy sauce, garlic, and shrimp paste or anchovy sauce. Adjust the seasoning to taste.
Add the larger slices of green onion and the chopped green chili. Boil once more until everything is well combined.
Serve hot with rice. The bean sprouts absorb the flavors, making the stew rich and spicy.
