INGREDIENTES
Meat
- 150g thinly sliced pork belly
Vegetables
- 🥔 2 medium potatoes (300g), diced
- 🍄 2 shiitake mushrooms, sliced
- 🧅 Chopped green onion, as needed
Condiments
- 100g kimchi
- 🧀 30g shredded pizza cheese
Liquid
- 💧 400cc water
Seasoning
- 1 tbsp sake
- 1 tbsp miso
- 1 tbsp gochujang
- 1/2 tsp chili powder
- 🧄 1/2 tsp grated garlic
- 1 tbsp sesame oil
PASSOS
Dice the potatoes into bite-sized pieces and soak them in water to remove excess starch. Slice the shiitake mushrooms into 5mm thick pieces.
Cut the pork belly into bite-sized pieces.
Mix all the seasoning ingredients (sake, miso, gochujang, chili powder, garlic, sesame oil) in a bowl.
Heat water in a pot until boiling. Add the pork belly and skim off any foam while cooking over medium heat.
Add the mixed seasoning to the pot and stir. Then add potatoes, shiitake mushrooms, and kimchi. Cover and simmer on low heat for 8–10 minutes until the potatoes are tender.
Top with shredded pizza cheese and sprinkle chopped green onions. Cook until the cheese melts.
