INGREDIENTES
Vegetables
- 🥬 1/2 bag spinach
- 🥔 1 potato (150g)
- 🥬 2 cabbage leaves
- 🍅 1/2 tomato
Dairy
- 🥛 2–3 tbsp milk
- 🧈 10g salted butter
Eggs
- 🥚 1 boiled egg
- 🥚 1 beaten egg
Seasoning
- 🧂 Salt and pepper to taste
Batter
- 🌾 3 tbsp all-purpose flour
- 🍞 Breadcrumbs as needed
Oil
- Vegetable oil for frying
PASSOS
Cut spinach into 2cm pieces, microwave at 600W for 2 minutes, rinse in water, cool, and squeeze out excess water.
Chop the boiled egg into large pieces. Cut the potato into bite-sized pieces, rinse, drain, and microwave at 600W for 4 minutes.
Shred the cabbage and cut the tomato into quarters.
Mash the potato with salt, pepper, and butter. Add milk and mix until smooth. Stir in spinach and boiled egg, then let cool.
Divide the mixture into 6–8 portions, shape into oval patties, and coat with flour. Dip into the batter mixture and coat with breadcrumbs.
Heat vegetable oil to 180°C and fry the croquettes until golden brown. Drain excess oil and serve with shredded cabbage and tomato.
