INGREDIENTES
Vegetables
- 🥬 80g spinach
- 🥔 200g potatoes, peeled and diced
- 🧅 60g sliced onion
Meat
- 🥓 80-100g thick-cut bacon, sliced
Egg and Dairy
- 🥚 2 eggs
- 🥚 2 egg yolks
- 🧀 1/3 cup grated cheese
Seasoning
- 🧂 A pinch of salt
- A dash of pepper
PASSOS
Chop the spinach, slice the onion, and cut the bacon into strips. Mix the eggs, egg yolks, cheese, salt, and pepper together.
Peel and dice the potatoes, then microwave them for 5-6 minutes until tender.
Heat a frying pan over low heat and cook the bacon until crispy. Remove the bacon and discard excess fat, then sauté the onion until softened.
Return the bacon to the pan, add the potatoes and spinach, and stir-fry until combined. Pour the egg mixture into the pan and stir quickly.
