INGREDIENTES
Mushroom
- 🍄 4 shiitake mushrooms
Cheese / Dairy
- 🧀 20g pizza cheese
Potato
- 🥔 1 potato (150g)
Condiments
- 1 tbsp mayonnaise
- 1 tbsp unsweetened yogurt
- 🧂 Pinch of salt and pepper
Bread
- 2 tbsp breadcrumbs
Oil
- 1/2 tbsp olive oil
PASSOS
Cut off the stems of the shiitake mushrooms and separate the caps and stems. Finely chop the stems.
Peel and cut the potato into bite-sized pieces. Soak in water briefly, then drain. Place in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 4 minutes. Mash the potato while hot using a fork.
Mix the mashed potato with the chopped shiitake stems and the remaining ☆ ingredients until smooth to create the mashed potato mixture.
Combine the ★ ingredients in a bowl to make olive breadcrumbs.
Place pizza cheese and mashed potato mixture evenly onto the shiitake caps. Arrange them on a baking tray lined with aluminum foil and sprinkle olive breadcrumbs on top.
Bake in a toaster oven for about 3 minutes or until golden brown.
