INGREDIENTES
Meat
- 🥩 100g sliced beef
Vegetables
- 🥔 3 potatoes (450g)
- 10cm burdock root (30g)
- 🧅 1/2 green onion (50g)
Cooking Oil
- 1 tsp salad oil
Seasoning
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1 tsp sugar
- 1 tbsp soy sauce
Breading
- Flour as needed
- 🥚 1 beaten egg
- Breadcrumbs as needed
Frying Oil
- Salad oil as needed
PASSOS
Thinly slice the burdock root using a knife and soak in water for 5 minutes. Drain the water. Slice the green onion diagonally.
Wrap potatoes in damp kitchen paper and microwave at 600W for 5 minutes.
Heat salad oil in a pan and cook beef over medium-low heat until browned. Add burdock root and stir-fry for 3 minutes, then add green onion and cook until softened. Add seasoning ingredients and simmer until liquid is absorbed.
Mash the microwaved potatoes in a bowl, mix in the beef mixture, and let cool.
Divide the mixture into 4 portions, shape into oval patties, and coat with flour, beaten egg, and breadcrumbs.
Heat frying oil to 170°C and fry the croquettes for about 4 minutes, turning occasionally, until golden brown.
