INGREDIENTES
Protein
- 🍗 1 piece skinless chicken breast (250g)
Vegetables
- 🍆 2 eggplants (160g)
- 3 bell peppers (90g)
Seasoning
- 🧂 A pinch of salt and pepper
- 1/2 tbsp potato starch
- 2 tbsp salad oil
Sauce
- 1 tbsp sake
- 🍬 1/2 tbsp sugar
- 2 tbsp ponzu soy sauce
- 🍅 3 tbsp ketchup
PASSOS
Cut off the stems of the eggplants, slice them in half lengthwise, and chop into bite-sized pieces. Halve the bell peppers, remove the stems and seeds, and chop into bite-sized pieces.
Cut the chicken into bite-sized pieces, season with salt and pepper, and coat with potato starch.
Mix all sauce ingredients (sake, sugar, ponzu soy sauce, ketchup) in a bowl.
Heat half the salad oil (1 tbsp) in a frying pan over medium heat. Add the chicken and cook for about 5 minutes, flipping until both sides are golden brown.
Push the chicken to the side of the pan, add the remaining salad oil (1 tbsp), and stir-fry the eggplants over medium heat until softened. Cover and steam on low heat for about 3 minutes until tender.
Add the bell peppers and stir-fry briefly until coated with oil. Pour in the sauce and simmer until thickened.
