INGREDIENTES
Main
- 4 taro roots (250g)
- 🌽 1/2 can corn (40g)
- 🧀 40g shredded pizza cheese
- 1/2 tbsp curry powder
- 🧂 1/4 tsp salt
- A pinch of pepper
- 💧 2 tbsp water
- Vegetable oil for frying
Coating
- All-purpose flour as needed
- 🥚 1 beaten egg
- 🍞 Breadcrumbs as needed
Garnish
- 🥬 Lettuce as needed
- 🍅 Tomato as needed
PASSOS
Peel the taro roots and cut them into bite-sized pieces. Sprinkle with a pinch of salt, rub gently, rinse with water, and drain.
Place the taro and water in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for about 5 minutes until tender. Mash while still hot.
Mix the mashed taro with corn, shredded cheese, curry powder, salt, and pepper. Divide into 4 portions and shape into round patties.
Coat each patty in flour, dip into the beaten egg, and then coat with breadcrumbs.
Heat vegetable oil to 170°C (340°F) in a pot. Fry the croquettes until golden brown, turning occasionally.
