INGREDIENTES
Meat
- 500g pork spare ribs
Vegetables
- 🧅 1 onion (200g), minced
- 🧄 2 cloves garlic, crushed
Seasoning
- 🧂 Pinch of salt and pepper
Cooking Oil
- 1 tbsp olive oil
- 🧈 10g salted butter
Liquids
- 200cc red wine
- 💧 100cc water
Herbs
- 1 bay leaf
Sauces
- 🧂 1/2 tsp salt
- 2 tbsp Worcestershire sauce
- 290g canned demi-glace sauce
- 🍅 50g tomato puree
PASSOS
Season the pork spare ribs with salt and pepper.
Mince the onion and crush the garlic cloves, removing their cores.
Heat olive oil and butter in a pot, add garlic, and sauté until fragrant. Add the pork spare ribs and sear until browned, then remove.
Add minced onion to the same pot and sauté until translucent. Return the pork spare ribs to the pot.
Add red wine, water, and bay leaf. Mix well, cover, and simmer on low heat for 30–40 minutes.
Add salt, Worcestershire sauce, demi-glace sauce, and tomato puree. Mix well and simmer for another 15 minutes.
