INGREDIENTES
Main Ingredients
- 1 piece thick fried tofu
- 1 pack enoki mushrooms
- 1/2 bunch chives
- 1 clove ginger, sliced
- 1/2 tbsp salad oil
Yuzu Pepper Sauce
- 150 ml water
- 1 pinch dashi powder
- 1 tsp yuzu pepper
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1 tsp sugar
- 1/2 tbsp soy sauce
Thickening Agent
- 1/2 tbsp potato starch
- 1/2 tbsp water
PASSOS
Cut the thick fried tofu into bite-sized pieces. Trim the root of enoki mushrooms and cut them in half lengthwise. Slice the chives into 3 cm pieces and ginger into thin strips.
Mix all the Yuzu Pepper Sauce ingredients together in a bowl.
Heat salad oil in a frying pan over medium heat. Add the tofu and fry until both sides are golden brown. Remove and set aside.
Wipe the pan lightly and add enoki mushrooms and ginger. Stir-fry briefly, then pour in the prepared sauce. Cook until the mushrooms soften.
Add the chives and cook briefly. Stir in the potato starch mixture to thicken the sauce.
