INGREDIENTES
Main
- 🍚 1 bowl of cooked rice (150g)
- 🍗 120g chicken thigh (for karaage)
- 1/3 sheet roasted seaweed
- Potato starch, as needed
- Salad oil, as needed
Seasoning for Chicken
- 1 tbsp sake
- 1 red shiso pickled ume
- 1 tsp concentrated soy sauce
- 1/2 tsp grated ginger
Side Dish: Bacon-Wrapped Greens
- 🥓 3 slices bacon
- 40g greens (e.g., nanohana)
- 🧂 Salt and pepper, to taste
- 1/2 tsp salad oil
PASSOS
Cut the greens in half and remove the seed from the ume, then mash it.
Place chicken and seasoning ingredients (sake, ume, soy sauce, ginger) into a bag and massage. Let it sit for 5 minutes.
Wrap greens with bacon slices and secure with toothpicks. Repeat to make 3 rolls.
Heat 1/2 tsp salad oil in a small pan over medium heat. Cook bacon rolls until browned, then cover and steam on low heat for 2-3 minutes. Season with salt and pepper, then cool.
Add torn seaweed to the marinated chicken and mix well. Coat chicken pieces with potato starch.
Heat oil in the same pan to 170°C. Fry chicken until golden brown and cooked through, flipping occasionally. Cool the karaage.
Pack rice, karaage, and bacon rolls into a bento box.
