INGREDIENTES
Fish
- 10 wakasagi fish (100g)
Vegetables
- 1/2 burdock root (70g)
- 1 tbsp chopped green onion
Egg
- 🥚 2 eggs, beaten
Liquid
- 200cc water
Seasoning
- 1 tbsp sake
- 1 tbsp mirin
- 🧂 1/2 tbsp sugar
- 1 tbsp soy sauce
- 1/3 tsp Japanese dashi powder
PASSOS
Thinly slice burdock root using a rotating motion with the knife tip (sasagaki style). Soak in water and drain.
In a frying pan, add burdock root and water. Bring to a boil, cover, and simmer on low heat for 5 minutes.
Add the seasoning ingredients (☆) and wakasagi fish to the pan. Cook until the fish is fully cooked, then pour the beaten eggs over the mixture. Cover and simmer for 1 minute.
Serve the mixture in a dish and sprinkle chopped green onion on top.
