INGREDIENTS

- 🥚 1 egg
- 🧀 2 ounces shredded Cheddar cheese (Optional)
Seasonings & Spices
- 🧂 ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
Bulk Ingredients
- 2 cups leftover mashed potatoes
- 2 tablespoons all-purpose flour
- ½ cup Italian-style panko bread crumbs
- ½ cup all-purpose flour
- 1 tablespoon minced chives (Optional)
STEPS
Set air fryer to 380°F (190°C) and allow it to heat while making the potato cakes.
Prepare foil slings if using a basket-style air fryer, and spray the foil with cooking spray.
Crack egg into a mixing bowl and lightly beat with salt and pepper.
Mix cold mashed potatoes, 2 tablespoons flour, and Cheddar cheese into the egg mixture. Divide potato mixture into 6 portions.
Combine panko and ½ cup flour on a plate.
Flatten each portion of potato mixture into a cake, coat with flour and panko, and place onto the prepared foil slings.
Place the foil slings with potato cakes into the air fryer basket, spray liberally with olive oil, and air fry for 10 minutes.
Carefully remove the foil slings, transfer the cakes to a serving plate, sprinkle with chives, and serve.
