INGREDIENTS
Pasta
- 2 (16 ounce) packages ziti
Sauces and Cheese
- 1 (16 ounce) jar spaghetti sauce
- 1 (15 ounce) container ricotta cheese
- 1 (8 ounce) package shredded Italian cheese blend
- 3 (16 ounce) jars spaghetti sauce
Vegetables
- 1 (6 ounce) package baby spinach leaves
- 1 pound ready-peeled baby carrots
- 3 small zucchini, diced
- 1 (6 ounce) package portobello mushroom caps, diced
- 1 (8 ounce) package button mushrooms, diced
- 1 (28 ounce) can diced tomatoes, drained
Seasonings and Oils
- 2 tablespoons olive oil
- 1 ½ tablespoons minced garlic
- 2 tablespoons Italian seasoning
- salt and ground black pepper to taste
STEPS
Preheat oven to 375°F (190°C).
Boil ziti in salted water until al dente, about 8 minutes. Drain and rinse with cold water. Transfer pasta to a large roasting pan.
Whisk together 1 jar of spaghetti sauce and ricotta cheese in a bowl. Mix with the pasta.
Blend spinach and carrots in a food processor until finely chopped.
Heat olive oil in a skillet and cook carrots for 2 minutes. Add zucchini, portobello mushrooms, button mushrooms, and garlic; cook another 4 minutes. Stir in spinach, tomatoes, and seasoning. Remove from heat and mix with ziti.
Sprinkle half of the shredded cheese over the pasta and mix. Pour remaining jars of spaghetti sauce and stir evenly with vegetables.
Cover pan with aluminum foil and bake for 1 to 1.5 hours in preheated oven.
Remove foil and sprinkle remaining cheese over the dish. Return to oven and bake for 10 minutes until cheese melts and browns.
