INGREDIENTS

- 1 (12 to 16 ounce) pork tenderloin

- 1 tablespoon olive oil
- 1 tablespoon Worcestershire sauce, divided
- 5 teaspoons prepared horseradish, divided

- 1 teaspoon black pepper, divided

- 1/2 cup Mexican crema
STEPS
Marinate the pork tenderloin with olive oil, 1 teaspoon horseradish, and 1 teaspoon Worcestershire sauce in a resealable plastic bag. Chill for 30 minutes to 4 hours.
Prepare an outdoor grill with direct and indirect heat. Preheat to medium heat (350 to 375°F / 175 to 190°C). Oil grill grates.
Grill tomatoes, lemon (cut sides down), onion, and chile over direct heat, turning halfway through, until lightly charred (6–8 minutes). Remove and keep grill lit.
Remove pork from marinade and discard marinade. Season pork with 1/2 teaspoon each salt and black pepper. Grill over indirect heat, turning halfway through, 30–35 minutes until pork reaches 145°F (63°C). Rest for 10 minutes under foil.
Prepare salsa by chopping grilled tomatoes, onion, and chile. Combine with horseradish, Worcestershire sauce, lemon juice, and remaining seasonings.
Whisk Mexican crema with horseradish and Worcestershire sauce to make horseradish crema.
Slice pork, assemble on tortillas, and top with salsa, horseradish crema, reserved onion, celery, olives, cotija, and lemon wedges.
