INGREDIENTES
Main Ingredients
- 1kg pork backbone
- 💧 2L water
- 2 bay leaves
Seasoning
- 4 tbsp chili powder
- 🍬 3 tbsp sugar
- 🧄 3 tbsp minced garlic
- 4 tbsp corn syrup
- 6 tbsp soy sauce
- 4 tbsp mirin
- 1/2 tbsp gochujang
- 1/2 tbsp doenjang
- 1/3 tbsp dashida
- 2 pinches black pepper
- 1 green chili
- 🧅 1/5 green onion
- 💧 200cc water
PASSOS
Soak 1kg pork backbone in water for 3–4 hours, changing the water every hour to remove blood.
Mix all seasoning ingredients together, including sliced green chili and green onion.
Boil 2L of water and add the soaked pork backbone along with 2 bay leaves. Boil for 5 minutes.
Discard the boiling water and rinse the pork backbone in cold water 2–3 times to remove impurities.
Place the pork backbone and seasoning mixture into a large stainless steel pot.
Cook on medium heat, stirring occasionally, until the sauce thickens and coats the pork backbone.
Serve in a bowl and enjoy your braised pork backbone.
