INGREDIENTS

- 🥔 ¾ pound red potatoes, cut into 1-inch chunks
- 1 ½ cups small fresh cauliflower florets
- 1 green bell pepper, chopped
- 1 yellow bell pepper, chopped

- 🍗 4 (4 ounce) boneless skinless chicken breast halves

- ½ cup KRAFT Lite Balsamic Vinaigrette Dressing

STEPS
Cook potatoes and cauliflower in boiling water in a large saucepan for 20 minutes or until tender.
Meanwhile, cook chicken in a large nonstick skillet sprayed with cooking spray on medium heat for 3 to 4 minutes on each side or until golden brown. Transfer to a plate and cover to keep warm.
Add dressing, mushrooms, and peppers to the skillet; cook and stir for 6 minutes. Add tomatoes and simmer for 8 minutes. Return chicken to skillet; spoon sauce over chicken. Simmer for 3 minutes or until chicken is cooked through (165°F).
Drain the potato mixture; return to the pan. Add reduced-fat cream cheese and mash until the potato mixture is fluffy.
Serve the mashed potatoes topped with chicken, vegetables, and fresh basil.
